Vegetable Fried Rice​

Ingredients:  Serves 2 people and it is 3 of your 5 a day per person

150g wild rice

12 x baby sweet corn cut diagonally

1 x orange pepper sliced

1 x red pointed red pepper sliced

150g mangetou cut diagonally

12 x chestnut mushrooms cut into quarters

2 spring onions sliced

½ green chilli diced finely

½ tbsp groundnut oil

1 tbsp soy sauced

Good pinch of cracked black pepper

Method

1 Cook the rice according to the packet instructions. When cook set aside and cool.

2 Add the ground nut oil, then the spring onions and mix.

3 Then add the peppers and mushrooms then stir. Let that cook for 30 seconds.

4 Then add the baby sweet corn and mangtou and stir. Let it cook for 1 minute frequently stirring.

5 Then pour in the soy sauce and add the cracked black pepper and stir.

6 After 30 seconds then add the rice and stir.

7 Add in the thyme holding back 2 pinches for garnish and continually stirring until the rice is hot.

8 When the rice has warmed though, plate up, sprinkle the thyme on top as a garnish and serve.
