18 x cherry tomatoes (I used a mix of red yellow) quartered and halved
½ medium red onion finely diced
½ red chilli finely diced (optional)
Small bunch of coriander finely chopped
1 garlic clove crushed
½ lime juiced
2 tsp white wine vinegar
Pinch of cracked black pepper
Pinch of rock salt
1 Put the cherry tomatoes, red onion, garlic, chilli and coriander in a bowl, then mix.
2 Add the lime juice, white wine vinegar and mix, then add the salt and pepper to taste then mix.
3 Serve and enjoy!
