Quinoa, Avocado and Baby Spinach Salad

Ingredients:  Serves 2 people and it is 5 of your 5 a day per person

160g Quinoa

4 x handfuls of baby spinach

1 x Avocado peeled and cut in half

4 inch cucumber cut in half length ways and sliced

1 x yellow pepper sliced length ways and cut in half

14 x sun ripe tomatoes chopped

2 x edamame beans shelled out of their pods

Dressing

½ fresh lemon juice

1 tbsp chilli oil

Pinch of cracked black pepper

Method

1 Cook the quinoa according to the packet instructions, when cooked set aside to cool.

2 Place the baby spinach on to a plate and put the quinoa on top in the middle of the baby spinach.

3 Add the edamame beans, cucumber, sun ripe tomatoes and yellow pepper around the plate.

4 Put the avocado on top in the middle.

5 Put ingredients for the dressing in a jar a shake or mix in a small jug and drizzle over the salad and serve.
