Ingredients
400g of can of organic chickpeas
3 tbsp tahini
Juice of 1 large organic lemon
4tbsp extra virgin olive oil
2 cloves of garlic minced (or 2 tsp of lazy garlic)
Good pinch of salt
½ tsp of ground cumin
3 x Sweet red pointed peppers cut in half deseeded
2 tsp smoked paprika
1 tsp paprika
1 tsp chilli powder
1 tsp ground coriander
1 handful of fresh basil
2 – 3 tbsp of water
3 sprays of olive oil
Good pinch of cracked black pepper
Good pinch of rock salt
Method
1 Spray the red pepper with the olive oil then place in a pre-heated oven 200c/400f/Gas6 for 15 – 20 minutes. Don’t burn them.
2 When cooked set aside until cooled
3 Add all the ingredients to a food processor or mini chopper (except the water) and whiz together for about 30 seconds until all the ingredients has minced and combined.
4 Add 2 tbsp of water and whiz for 20 seconds, if you need more water to loosen add 1 tbsp of water (I like to have a bit of texture to my hummus but you can make it as smooth as you want).
5 Your hummus is ready to enjoy.
