Ingredients
400g of can of organic chickpeas
3 tbsp tahini
Juice and zest of 1 large organic unwaxed lemon
¼ lemon flesh
2 cloves of garlic minced (or 2 tsp of lazy garlic)
1½ tsp cumin
1 tsp chilli flakes
1 handful of fresh coriander leaves with the stems chopped
1½ tbsp lemon olive oil
1½ tbsp chilli olive oil
1 tbsp olive extra virgin olive oil
Good pinch of cracked black pepper
Pinch of rock salt
Method
1 Add all the ingredients to a food processor or mini chopper (except the water) and whiz together for about 30 seconds until all the ingredients has minced and combined.
2 Add 2 tbsp of water and whiz for 20 seconds (I like to have a bit of texture to my hummus but you can make it as smooth as you want).
3 Your hummus is ready to enjoy.
