Mushroom Fajitas​

Ingredients: Serves 2 people (4 – 6 people as a light bite) and it is 3 of your 5 a day per person.

1 red pepper sliced lengthways

1 green pepper 1 yellow lengthways

1 medium onion sliced lengthways

½ tbsp fajitas seasoning

1 tsp smoked paprika

1 x 150g pack button mushroom cut in half

10 x romaine lettuce leaves

Small bunch of coriander finely chopped

1 tbsp olive oil


1 Heat a wok or large frying pan on a medium to high heat then pour in the oil.

2 Then add onions, mushrooms and peppers and mix.

3 After about 1–2 minute, add the fajitas seasoning and smoked paprika continually stirring.

4 After about 1 minute add the coriander and stir.

5 Then after about 1 minute, spoon into each of the lettuce leaves, try not to over fill them.

6 Serve with some tomato salsa and enjoy!
