​Lentils and Quinoa with Kale


Ingredients: Serves 2 people and it is 4 of you 5 a day per person

160g chopped kale

1 x orange pepper thinly sliced lengthways and cut into 3 across

1 x shallot onion cut in half and thinly sliced across

1 x yellow chilli finely diced

10 x sun dream tomatoes

2 x garlic cloves crushed

1 x 400g can organic Bijoux verts lentils or puy lentils

100g quinoa

10 stems of fresh coriander finely chopped

Pinch of cracked black pepper

1 tbsp coconut oil


1 Cook the quinoa according to the instructions on the packet, when cooked remove from the heat and set aside.

2 Heat up a wok, on a medium heat, and add the coconut oil.

3 Then add the shallots, orange pepper and yellow chilli then stir.

4 After 30 seconds add the garlic and stir, then add the kale and stir.

5 Stirring regularly cook for about 2 minutes.

6 Then add the Bijoux vert lentils and quinoa then stir, mixing it all together, before adding the tomatoes, coriander and cracked black pepper then stir again.

7 Regularly stirring cook for another 1-2 minutes the plate and enjoy.
