​Jacket Sweet Potato and Spicy Mixed Beans​

Ingredients:  Serves 2 people and it is 2 of your 5 a day per person

2 medium sweet potatoes scrubbed clean, and pricked with a fork

400g tin of mixed beans in water, drained

500g carton passata

3 spring onions chopped

¼ green pepper diced

¼ orange pepper diced

¼ yellow pepper diced

1 small chilli deseeded and chopped finely

1 tbsp olive oil

½ tbsp of smoked paprika

½ tbsp of paprika

1 tsp cumin

Small bunch of coriander

Good pinch of rock salt

Good pinch of cracked black pepper

Method

1 Place the sweet potatoes in the microwave 8- 10 minutes, until the sweet potatoes have soften a little. Then place the sweet potatoes in a pre-heated oven on 220c/450f/Gas8 for 20-30 minutes until the skin is crispy.

2 Pre-heat a sauce pan on a medium heat, add the oil then add the spring onions, green, orange and yellow peppers and stir.

3 After about 30 seconds add the chilli and stir then add the smoked paprika, paprika, cumin, rock salt, cracked black pepper, stir and cook for about a minute.

4 Then add the mixed beans stir and after 30 seconds add the passata mix place the lid on and turn down to a low heat and simmer for 5 minutes stirring occasionally.

5 Then add in the chopped coriander – keeping two pinches to one side for the garnish. Stir and simmer for another 5 minutes. Stir occasionally to make sure it does not catch at the bottom of the pan.

6 When the potatoes are cooked remove from the oven and place on a plate. Cut the sweet potatoes length ways then across and open out. Be careful as it will be very hot.

7 Then remove the beans from the heat giving it another stir, before putting the beans in the middle of the opened sweet potatoes. Garnish with a sprinkle of the coriander then serve.
